<p>皆さん「明石の魚が美味しいのは海が近いし当然やろう。」と思っている方はいませんか？</p>



<p>実は<strong><span class="swl-marker mark_blue">明石の漁師、組合員、魚屋の皆さんの熱意とこだわりの賜物</span></strong>なんです。</p>



<p>今回の記事は、<strong><span class="swl-marker mark_blue">実際に明石浦のセリに参加してわかった、なぜ明石の魚が美味しいのか</span></strong>をご紹介します。</p>

<p>通常の多くの地域でされているセリは、〆られた魚を並べて値段を付けます。</p>

<h2 class="wp-block-heading">1.生きたまま水揚げされる</h2>

<p>明石の魚のほとんどがなんと<strong><span class="swl-marker mark_blue">生きたまま水揚げ</span></strong>されます。</p>



<p>例えば、サワラの漁師は<strong>生け簀の壁にサワラがぶつからないように</strong>、</p>



<p><strong>海から漁港に帰るルートや時間まで考えているほどのこだわり</strong>。</p>



<p>ちなみに明石のサワラもブランドとして実はかなり有名とのこと。</p>



<p>鯛、タコ、穴子だけじゃない明石、すごい。</p>

<p>多くの地域では<strong>海水氷などに入れられて窒息や冷却によって息絶えることが多い</strong>ようです。</p>



<p>私は釣りをしているからわかるのですが、<strong><span class="swl-marker mark_blue">魚の美味しさはストレスがかなり影響</span></strong>します。</p>



<p>美味しい魚でも暴れまわって死んだ魚だと味が格段に落ちてしまいます。</p>



<h2 class="wp-block-heading">2.セリ前に選別される</h2>



<p>生きたまま水揚げされた魚はさらに、<strong><span class="swl-marker mark_blue">良い魚、弱った魚、死んだ魚などで分けられます</span></strong>。</p>



<p>ちなみにこの作業を漁師の奥さんがやることが多く、明石は<span class="swl-marker mark_blue"><strong>日本一女の人が多いセリ</strong></span>と言われています。</p>

<h2 class="wp-block-heading">3.生きたままセリにかけられる</h2>



<p>そしてなんとセリは生きたままかけられます。</p>



<p>生きたままなのでセリのスピードもとても大事。</p>



<p>見学したときはセリでの熱量に圧倒されました。</p>

<p>ちなみに<strong><span class="swl-marker mark_blue">生きている魚がほとんどなので明石浦のセリは魚のにおいが全然しません</span></strong>。</p>







<h2 class="wp-block-heading">4.一晩活け越しにして旨味成分を回復させる</h2>



<p>これで終わりかと思いきや、まだまだ美味しさへのこだわりは続きます。</p>



<p>セリのあとは暗くて静かな場所に<strong><span class="swl-marker mark_blue">一晩活け越し（いけごし）</span></strong>にします。</p>

<p>活け越しってなんやねん、というと<strong>お魚に暗いところで休んでもらう</strong>だけです。</p>



<p>これが実はかなり重要で、先述した<strong><span class="swl-marker mark_blue">魚のストレスが軽減</span></strong>されます。</p>



<p>そうすると元々あった<strong><span class="swl-marker mark_blue">魚の旨味成分が回復</span></strong>します。</p>



<p>さらに胃腸に残った餌などを排泄し、<strong><span class="swl-marker mark_blue">においも減ります</span></strong>。</p>







<h2 class="wp-block-heading">5.脳締めをして暴れないようにする</h2>



<p>そしてストレス軽減された魚をなんと<strong><span class="swl-marker mark_blue">一匹一匹手作業で脳締め</span></strong>にします。</p>



<p>脳締めすることで暴れるのを防ぎ、<strong>ストレス軽減された状態で即死</strong>させます。</p>

<p>魚の小さな<strong>脳みそを一撃で刺せるのもすごい技術</strong>です。</p>



<h2 class="wp-block-heading">6.血抜きをして身の品質を維持する</h2>



<p>さらにまた<strong><span class="swl-marker mark_blue">一匹一匹手作業で血抜き</span></strong>をします。</p>



<p>血抜きは皆さんも聞いたことがあるかと思います。</p>



<p>血を抜くことで<strong>身の劣化や生臭さを防ぐ</strong>ことができます。</p>

<p>ちなみに釣りをしていると分かるのですが、この血抜き動作も奥が深く、</p>



<p>簡単に綺麗に血が抜けるものではありません。</p>



<p>職員さんのこの技術も見ていてすごかったです。</p>



<h2 class="wp-block-heading">7.神経抜きをして鮮度を維持する</h2>



<p>もう終わりかと思いきやまだあります。</p>



<p>最後は<strong><span class="swl-marker mark_blue">一匹一匹手作業で神経絞め</span></strong>をします。</p>



<p>神経締めをすることで<strong><span class="swl-marker mark_blue">死んだという情報が細胞に伝わらなくなり、鮮度が保てます</span></strong>。</p>

<p>ちなみにこちらがすべての工程を終えた鯛です。</p>

<p>目はもちろん澄んでいますし、真鯛の特徴である青い小斑点も残っていてとても綺麗です。</p>



<p>通常私たちが買う鯛は、死んでから時間が経っいるため、鱗は硬くなっており、触ると痛いくらいです。</p>



<p>なんと<strong><span class="swl-marker mark_blue">新鮮な鯛だと鱗は人間の爪で簡単にはがせる</span></strong>とのこと。</p>



<p>実際にやってもらったのがこちら。鯛を釣ったことのある私としては衝撃的でした。</p>

<p>今回セリを近くで見させてもらい、熱気やプロの仕事ぶりに痺れました。</p>



<p>ワクワクと鳥肌が立つような感覚でした。</p>



<p><strong><span class="swl-marker mark_blue">明石の美味しい魚を届けるために、いかに新鮮でストレスの無い状態で届けるかを考え抜かれている</span></strong>と肌で感じました。</p>



<p>普段は魚に縁がない嫁もセリの現場を見学して、</p>



<p><br>「これはかっこいいね・・子供がこの現場を見たら、将来この仕事やってみたいって言う子が増えそう。」</p>



<p>と言っていました。</p>



<p><br>それほど活気があり、関係者のプライドを感じる空間でした。</p>



<p><strong>「生きたままセリにかける」</strong></p>



<p>この世界にいる方こそ、これがどれだけすごいことか分かると思います。</p>



<p><br>美味しい魚を届けるための裏側を知ったからこそ、<br>自分の元に来た魚を、<br>できる限り部位を捨てずに食べたいと思いました。</p>



<p>私は明石のことが大好きですが、<br>今回<strong>明石浦のセリの世界を知って、ますます明石のことが好きになり、誇らしく思いました</strong>。</p>



<p>みなさんにこの凄さをもっと知ってもらいたいと思い、<br>セリ見学の次の日にこのブログを書いています！笑</p>
